Cabernet Zaubergold 2009 – a very special, concentrated, heavy, and gentle sweet wine, joins a special series with its siblings from 2004. It was created from Cabernet Sauvignon grapes originally from Karmei Yosef and went through the same unique production process as its older siblings. The process is based on the wine production methods of the Heavy weight Amarone wines that brought it to 17% alcohol percentage. Due to its unique power, the wine is aged by a combination of new oak wooden barrels, for three and a half years, and during this period of time the barrels are replaced twice (200% wood). It takes 3KG of grapes in order to produce one bottle, three time of a normal quality wine bottle. The wine came onto the market in 2016, after 3 years of aging in the winery cellars.

Winemaker thoughts:
4.17 – Cabernet Zaubergold 2009 – It occurs only once every few years and it last happened in 2004. The wine in my opinion goes into the category “Huge”, and it’s different and more special than its older siblings from 2004. The long fermentation, double aging in new wooden barrels, slight sweetness and high alcohol percentage, is a unique and very successful combination in my opinion. This is the kind of wine that is made only every few years and cannot be anticipated. The concentration of flavors and high alcohol percentage in the wine gives it a possibility for long aging and a wide range of unique tastes. It is recommended to move the wine to a decanter at least an hour before consumption. The wine has aged in the bottle for around 4 years and is suitable for consumption immediately or for further aging.
